This has to be the most simple dessert (and yet incredibly delicious and refreshing). The original recipe contained strawberries instead of blueberries but since it's quite hard to find good, mouth-watering strawberries around here this time of the year, I replaced them with blueberries and also adjusted the recipe a bit and experimented. I think that's also the trick - to add anything you think would feel & taste right.
The recipe (makes for 2 parfaits)
4-6 oatmeal cookies
Blueberries (approximately two cups)
Plain Yoghurt (approximately a cup and a half)
*Sugar - optionally
*Whipped cream - optionally
Place the cookies in a blender and process; place the mixture on the bottom of your cups. Add a couple drops of vanilla syrup (you can combine it with water for a less intensive and more juicy taste). Add fresh blueberries (you can also add them into the cream later; the quantity of blueberries really depends on your preferences). Top it with melted chocolate mixture and let it cool. In the meantime, place about a cup of blueberries in a blender and process until smooth. Combine it with yoghurt (optionally add sugar, if you like your desserts sweet) and stir it until the liquid is smooth and purple. Place it on top of the cooled chocolate and let it cool in the fridge for about an hour. You can also add some whipped cream (but it's delicious without it as well). Top it with chocolate crumbs when serving.
So simple & quick, yet so refreshing.
